The Province of Siena offers to the world many largely still artisan-made and but little industrialised beverages and foods: wines, ciders, cheep cheeses, cinta- pig pork products, truffles and a great deal more, all clean, pure, unadulterated and in large part raised organically. Exploring this little world of flavours new and old, even if only on a screen or printed page, is both an adventure and a pleasure.
The province produces about seventy-five million litres of wine a year, most of them from the twelve DOC and five DOCG zones. They are quality wines, confirming the high vinely vocation of this territory. Siena vines..
Oil
The oil tipology are three. They are protected by a quality mark produced in the sienese province. They are three different declinations of this product , all of high quality, obtained by the typical cultivate oil-press Correggiolo, Moraiolo, Leccino
Cheese
Sheep milk cheeses, first of all Tuscan Pecorino Cheese Dop constitutes the best of the sienese cheese production such as Crete Pecorino Cheese, Marzolino and Raviggiolo.
Bread and pasta
Like most Tuscan breads, Siena’s too is saltless. Dante Alighieri, writing in about 1300, says to a personage in Il Paradise ‘Tu proverai sì come sa di sale lo pane altrui!’, ‘Oh yes, you’ll discover how salted is the bread of others!’ . As concern pasta, in Siena this means Pici, a sort of handmade spaghetti.
Meat - salamis
Cinta pigs were raised in and around Siena as early as the fourteenth century, as is shown, among many other depictions, in the great fresco Il Buon Governo by Ambrogio Lorenzetti (d. Siena about 1348).
Mushrooms - truffles
White round truffles, famous for their exceptional aroma, are found in the region known as Crete.
Honey
Honey derived from acacias and from a hundred varieties of uncontaminated, wild-state flowers are produced by bees free to roam the countryside.
